French Friday with Dorie: Cola and Jam Spareribs

In our family, the men all love ribs.  Ribs that are slow cooked, with meat falling off the bone, and with lots of flavor are a favorite.  They were all happily anticipating the Cola and Jam Spareribs.

We have college kids home for a week.  My Emmielouwho and Baby M have not been home since Christmas when they arrived for the holidays with M who was only 1 week old.  It was a joy to take them along shopping for our dinner items which included the spare ribs.  All the other items for this recipe were found in our pantry or growing in the back yard.  We continue to enjoy using our citrus, but in another month it will be gone until November.

Since we have extra people home for the week, and other family and friends here spending time with those additional people, we decided to cook an extra large batch of ribs...almost 15 pounds.  Due to the large quantity, we also decided to roast them slowly for a longer time.

First we marinated the ribs in the apricot jam/citrus juice/spice mixture with the spices.  Then we slowly roasted them for 7-8 hours, until the meat was falling off the bones.  During this roasting time we added Coca Cola for a flavored basting, but since we chose an alternative roasting method, our pan was closed with a lid and the moisture was kept in.

Before serving the ribs as our dinner main course we had a taste test.  The ribs had very little flavor, but were very tender.  With the lid on, the juices and sauces had stayed in the pan and had not concentrated very much...so, we added BBQ sauce and that did the trick.  Delicious.  Juicy, melt-in-your mouth ribs with great flavor.  Everyone agreed that with the sauce these ribs were winners.

Then for a quick dinner the following evening, I took out all the bones and we made sandwiches.  My opinion is that the sandwiches with the BBQ rib meat were the best.

We are looking forward to a rhubarb recipe for next week...but so far, we are not finding rhubarb at the market.  Not a usual AZ item, but we’ll keep trying.  We were out of state all last week, visiting my parents for their 60th wedding anniversary.  I made 3 strawberry rhubarb pies that were wonderful...they got me in the mood for more great rhubarb cooking.  I may just have to drool over all your cooking....but I’ll keep looking.

  3. I wondered why you had leftovers....LOL, I only made one slab and they disappeared quickly. I found frozen rhubarb at Fresh Market and Whole Foods if you have either of those in your area~

  4. Great post and photos! I wish I had enough leftovers to make that amazing sandwich too. I served the leftovers with pasta to make another dinner. :)

  9. That sandwich is delectable... I'm hungry all over again now! I also wished there were more flavor going into the rib meat itself. Maybe cooking them in the charcoal grill could help with that.

  10. The ribs looked good, but I have to say I was drooling over the "backyard" citrus. So jealous. But we do have an abundance of rhubarb up here! So I guess it balances things out.

  11. I love where I live, but when I read about your backyard citrus, it makes me want to winter somewhere south. We really liked this recipe, but we're not fans of traditional rib sauces. That said, your sandwiches look amazing!

  12. We actually liked the leftovers better than the first round too! I had some leftover and served them shredded off of the bone with rice. Your sandwiches look delicious!

  14. I miss my FFwD peeps:( My work schedule has been crazy, and I have not been able to get organized to participate on time. I was also reluctant to fuss with a good recipe for ribs - my husband is from the South, and is very particular about his ribs (I prefer country style and short ribs, and spare ribs need to be really good to win me over:)
    I am so happy that you made this recipe work for you. I was ogling those sandwiches and now I have a hankering! All your fault:) Missed you!
