French Fridays with Dorie: MAKE-UP: Chicken Basquaise


CHICKEN BASQUAISE or FAJITA?
The idea of liver anything is not exciting to me.  I'm up for trying new foods, however, liver is not in the family plan.  I grew up eating liver and onions on many Friday nights like some of my friends grew up eating fish on Fridays...Mother taught us that liver is necessary weekly for healthy iron levels in women and growing children...but my iron is great and I don't eat liver, so it has become an unnecessary food and has also become a bit repulsive...and that included chicken liver!

There, that said, I've chosen a make-up recipe...regretfully, I've missed quite a few during the past year.  I looked at the write-up for Chicken Basquaise and it said, "Make me."  I need to cook dinner for 3 or 4 of my men who will be at home tonight, and this recipe looks inviting.

Somehow what began as a French dinner turned to a Spanish dinner.  Does that ever happen to you?  As I gathered the ingredients, which are all standard items in my kitchen, I had the thought to turn this dish into fajitas.  With onions, peppers, chiles, chicken, and cilantro for a garnish this list begs to be tucked into a warm tortilla with a daube of sour cream, a little cheese, and slices of avocado...and there you have it, delicious fajitas.

Dorie suggests white rice, for serving, but a tortilla is just as good.    

I'll visit your blogs to view your chicken livers with pickled onions, but I'll be enjoying AZ style Chicken Basquaise tonight.

  1. I love this line "but my iron is great and I don't eat liver..." :-) I grew up on liver and onions as well (beef and chicken) and still haven't acquired a taste for it.

  2. Krissy, what a fun post - and although we really enjoyed the Chicken Basquaise back when I made it, I really love the way your fajitas look like so fresh and delicious, with lots of wonderful toppings!

  4. I feel so badly that you had liver so frequently as a child. Nana had us try new foods and I typically was a clean plate member of just about anything...but I would not have been able to take the texture or taste of that each week. Luckily her compassion continued to this day and Nana dropped off the prepped little livers so I had a chance of completing this. The final result really was not too bad at all, though die hard liver lovers may think it actually lean on the liver flavor. For me it gave me a fighting chance. Your chicken looks just fabulous and I am sure all your men were happy enjoying it !!

  5. Even though my parents always insisted we eat everything liver was served only to adults at our house. It actually made it seem kind of special and I ended up wanting bites whenever mom made it. Smart mom:) I think I missed the chicken basquaise. I need to check back because I don't remember it. At all! Yours looks good!

  7. I love your choice for a make up meal!!! I still have this chicken dish to try but I'm feeling like putting together a healthy meal with tortillas, always a favorite at my house;-)

  8. I'm obviously an oddball - I enjoy liver! The chicken basquaise is a great catch up choice. We loved it and I really like your idea for turning it into fajitas.

  9. Don't blame you a bit for choosing an alternative this week! I think I also missed this one. We pretty much put everything on a tortilla at our house, so I know that this is what would happen here. It looks really tasty.

  11. Ha! That's so great you made fajitas. I love fajitas. And often I start out to make one thing and it morphs into something else. Your dinner looks great. A bit jealous actually!
