French Fridays with Dorie: Creamy Cauliflower Soup Sans Cream



SIMPLE, ELEGANT, AND DELICIOUS
Cauliflower has always been a favorite vegetable of mine.  This is a beautiful, sturdy vegetable with a mild flavor, blending well with many foods.  It is at this time of year in AZ that cauliflower flourishes in our gardens.   I’ve been tending my neighbor’s garden while they are away for a month, and they have beautiful cauliflower growing abundantly.

I don’t think to use cauliflower in soups as it quickly overcooks, making it perfect as an easily pureed vegetable for today's challenge.  This soup is light and lovely and can be garnished with many toppings.  Because I enjoy defined flavors, I chose to top mine with crumbled crispy bacon, shaved Parmesan cheese, and fresh parsley. 

I’m interested to see your presentations.  Personally, I was happy to have a recipe that was simple and healthy for this very busy week of sugar and more sugar.

  2. Agreed! In Germany we start the holidays in early November with St. Martin's Day and then comes Thanksgiving. So it was nice to have a light one this week.

  7. Yes, it was simple and delicious. I used proscuitto and it was perfect. I will have to add the Parmesan to that.

  10. Your absolutely right. This was a perfect recipe for this week and this time of the year. Plain. Simple. Low in Calories. Filling. And, different. Aren't you lucky to have access to your neighbor's cauliflower but you also deserve kudos for tending in for them.......for one month. As if you had nothing else to do, Kris. Yours looks lovely in the low-lipped bowl. I put my soup in a large soup mug which isn't really a good presentation for this soup. Yours looks delicious.

  16. I love your add-ins! I also can relate to the need for simple, healthy food. We had this the same week that I went to a cookie swap. I came home with quite a few and there were many leftovers from the batches I'd baked, too.
